Shakshuka

A cast iron pan containing Shakshuka.

  1. Dice the onion, red pepper, and garlic. Sauté in olive oil for 5 minutes.
  2. Add the spices, pour in the tomatoes, and crack the eggs on top.
  3. Simmer until the eggs are cooked.
  4. Top with chopped parsley.

Works well with diced chorizo, pancetta, or smoked bacon lardons.
