Mulled Wine

2 bottles red wine

2 clementines

1 lemon

1 lime

100g dark brown sugar

6 whole cloves

1 cinnamon stick

3 bay leaves

1 whole nutmeg (or 1/2 teaspoon ground nutmeg)

1 vanilla pod (or 1 teaspoon vanilla extract)

2 star anise

Peel the clementines, lemon, and lime.

Add the peel, sugar, and juice to a saucepan.

Add the cloves, cinnamon, bay leaves, and 10 gratings of nutmeg. (If using ground nutmeg, use half a teaspoon.)

Halve the vanilla pod lengthways and add.

Add just enough wine to cover the sugar.

Simmer until the sugar has completely dissolved, then bring to the boil.

Boil for 5 minutes.

Turn down the heat and add the remaining wine and star anise. Heat gently.
