Chilli Con Carne

2 onions

2 red peppers

4 garlic cloves

4 teaspoons hot chilli powder

2 teaspoons paprika

2 teaspoons ground cumin

1kg minced beef

200g smoked bacon lardons

2 beef oxos

2 tins chopped tomatoes

1 teaspoon sugar

1 tube tomato puree

2 tins kidney beans

1 tin chickpeas
Makes 8 portions.

Fry the onion gently over a low heat for 15 minutes.

Add the peppers, garlic, and spices. Fry for another 5 minutes.

Brown the mince and the bacon lardons separately over a high heat.

Add the beef oxos, tomatoes, tomato puree, and sugar. Simmer for 20 minutes.

Add the kidney beans and chickpeas and simmer for another 10 minutes.

Leave to stand for 10 minutes before serving.
