Pork Casserole

1kg diced pork

2 tablespoons wholegrain mustard

500ml apple juice

250ml stock
-
250ml cream

Toss the pork in seasoned flour and brown.

Place the pork, apple juice, stock, and mustard in a casserole dish
and bake at 180°C for 1 hour.

Stir in the cream and bake for a further 15 minutes.

The sauce can be thickened by removing the meat and simmering until reduced.
